    Fatty is the correct term.

    I’ve never been happy with how the bacon turns out with a weave, so I typically just do a single layer of bacon.

    If you haven’t tried it yet, give a jalapeno popper version a go. I typically use mild Italian sausage instead of ground beef, then chop up jalapenos and shallots, mix with cream cheese and cheddar, then roll it all together like you have here. Wrap with bacon.
